Peach Mango Palmer

One of two flavors newly launched for Mother’s Day, the Peach Mango Palmer: featuring a refreshingly light and fruity 24-hour raised brioche filled with diced peach mascarpone cream, fresh mango glaze topped with a white chocolate flower and edible butterfly wafer paper finished with a Cîroc Peach Vodka pipette.

This creation in particular took multiple test runs experimenting sampling different flavors and combination of ingredients to achieve the perfect glossy glaze and mango peach flavor. With varying renditions of intricate and delicate white chocolate flower designs, we decided on a whimsical floral design to match Mother’s Day, coupled with a butterfly in hopes of illustrating the motif of a butterfly perched gently atop a flower.
